Lemon feta pasta

Sometimes you can be as organised as the most organised person who ever lived and then the online shop is full of substitutions, or you have unexpected guests and you still find yourself standing in front of the fridge at 1.30pm trying to work out what you’re going to make with feta and half a lemon.

Well this is it, this is what you make! Consider your fridge dilemma solved, and shut the door! Haven’t you heard of climate change?!

How to make Lemon feta pasta step-by-step.

Ingredients:


Any pasta (we like wholewheat because fibre is fab!)

1 pack of feta, cut into cubes

Juice of half a lemon

Salt and black pepper to season

2 handfuls of green veg (either frozen peas, spinach, or broccoli cut up into small florets)

What to prep:


If you have leftover pasta in the fridge then you can definitely use it here.

When you’re hungry:


If you’re using uncooked pasta then cook it according to the packet instructions.


If you’re using frozen peas or broccoli then add them with 5 minutes left to go.


(If you’re using pre-cooked pasta then pop it in some boiling water for a minute to warm it up and continue)


Drain the pasta, mix with the olive oil, a little salt and lots of cracked black pepper.


Squeeze over the lemon juice and mix in the cubed feta and any veg.


Eat the quickest and easiest fridge amnesty meal known to man!

  • 125 grams Any pasta (we like wholewheat because fibre is fab!)
  • 1 pack 1 pack of feta, cut into cubes
  • Juice of half a lemon
  • Salt and black pepper to season
  • 2 handfuls Green veg (e.g. frozen peas, spinach, or broccoli cut up into small florets)

  • If you’re using frozen peas or broccoli then add them with 5 minutes left to finish the pasta or from the start if using pre-prepped pasta.
  • Drain the pasta, mix with the olive oil, a little salt and lots of cracked black pepper.
  • Spinach can be added once the pasta has been drained and then mixed in. The heat from the pasta will wilt the spinach.
  • Squeeze over the lemon juice and mix in the cubed feta and any veg.
