Summer all-year-round Mango & avocado salad

Sometimes you have to go in search of Summer all by yourself and, while November means baked potatoes on Bonfire night and pumpkin pie for Thanksgiving, occasionally you just need to pretend it’s not wet and 4 degrees outside.

That’s where this recipe comes in…

Sunny mango, crisp, bitter rocket and creamy avocado all combine to help you imagine you’re about to step off your holiday beach house veranda and feel the warm sand in-between your toes. (I would grab a coat before you actually step outside, though: it’s freezing out there!)

Ingredients:

Ingredients:

1 ripe mango, peeled and sliced

50g cashews, chopped roughly

1 avocado, peeled and sliced

50g rocket

2 tsp of chopped fresh mint

For the dressing:

2 limes, juiced

1 tsp balsamic vinegar

2 tbsp olive oil

salt and pepper

Method:

Toss the mango and avocado slices in half the lime juice

With the rest of the lime juice, mix the balsamic vinegar, olive oil, salt and pepper to make a dressing.

Arrange (throw, if you’re us!) the avocado, rocket, and mango on a plate.

Toss over the cashews, mint and dressing. (if you’re preparing in advance, then leave this last step until you’re just about to eat).

And there you have summer all-year-round in a bowl!

Bonus side note: If you’d like to change it up a little you could also add in different toppings such as sun-dried tomatoes, walnuts and a sprinkling of crumbly cheese – a super tasty variation!

Bonus: As well as the whole sunny day transportation thing this recipe is also packed full of super-healthy Vitamin E which will, of course, help support your immune system when you wake up to reality and discover it’s still raining outside!!
