Toss the mango and avocado slices in half the lime juice
With the rest of the lime juice, mix the balsamic vinegar, olive oil, salt and pepper to make a dressing.
Arrange (throw, if you’re us!) the avocado, rocket, and mango on a plate.
Toss over the cashews, mint and dressing. (if you’re preparing in advance, then leave this last step until you’re just about to eat).
And there you have summer all-year-round in a bowl!
Bonus side note: If you’d like to change it up a little you could also add in different toppings such as sun-dried tomatoes, walnuts and a sprinkling of crumbly cheese – a super tasty variation!
